This recipe came from my mom. I'm not sure where she got it.
Serves 2.
- 1/2 cup sifted flour
- 1/2 cup water
- 2 eggs
- 3-4 slices Mozzarella cheese, cut into strips
- 1/2 cup ricotta cheese
- Parmesan/Romano cheese, grated
- Tomato sauce
Heat oven to 350.
For pasta: Beat flour and water until smooth, beat in eggs one at a time. Heat a 5 - 6 inch skillet over low heat. Grease with a few drops of oil, using a brush. Ladle batter into skillet. Cook over low heat until firm. Turn. Do not burn or brown. Turn out on dish. Makes 3 - 4 pancakes.
