I'll boil the water for a little while, then take it off heat, add the honey, cool, pitch, and go.  And that's more or less what happened.  Pitched at 106F.  We'll see if I killed the yeast.  I used about a third of the packet of yeast.  We'll see how that goes.  The honey had a little bit of an anise flavor.  Should be interesting anyway.  -[[User:Morrigu|Morrigu]] 17:32, 23 May 2010 (EST)

Racked again.  Still smells yeasty, but starting to look nice and clear.  -[[User:Morrigu|Morrigu]] 21:43, 8 August 2010 (EST)

The local brew shop has Eucalyptus honey, and I'm very curious, so I decided to try a 1 gallon batch using just that honey.

  • 3 lbs Eucalyptus honey
  • 1 gallon water
  • Yeast nutrient
  • Yeast energizer
  • Lalvin D 47 yeast
