Ingredients

  • 5 cups flour
  • 5 tsp salt
  • 2 envelopes of yeast
  • 1 tbsp sugar
  • 3 potatoes, mashed well
  • Enough water to knead into dough
  • Lots of oil for deep frying

Instructions

  1. Sift flour into bowl
  2. Add salt and sugar
  3. Bloom yeast according to directions
  4. Add mashed potatoes and yeast to flour mixture
  5. Mix together in bowl, add water as needed to make dough sitcky but not too mushy
  6. Upend bowl onto floured surface and knead dough until uniform
  7. Coat bowl with a thin layer of oil and return flour to it
  8. Let rise, covered, for over an hour or until dough doubles in size
  9. Deep fry in oil at 375 degrees in strips or balls, until golden brown
  10. Drain on paper towels
  11. Serve as is or with powdered sugar. Better when served hot. Can be reheated in the microwave.
