Mexican Chocolate Spice Cookies

Sweet and chocolatey with a little bite. My mother got the recipe from Laura Cole, a friend of hers, and now I have it too.

Easy to make and somewhat unusual. My kind of recipe!

Mexican Chocolate Cookies

Ingredients

  • 1 1/2 cups flour
  • 3/4 cups cocoa
  • 3/4 teaspoon salt
  • generous pinch of pepper
  • generous pinch of cayenne
  • 3/4 teaspoon cinnamon
  • 1 1/2 sticks ( 12 tablespoons) butter
  • 1 1/2 teaspoon vanilla
  • 1 cup sugar
  • 1 egg

Directions

  1. Cream butter and sugar. Add egg and vanilla.
  2. Mix dry ingredients together and mix them into the wet ones. Beat until just mixed.
  3. Lightly flour board or counter and shape dough into a cylinder about 2 or 3 inches wide. Wrap in wax paper and freeze until firm.
  4. Cut into 1/4 inch slices. Place slices on an ungreased cookie sheet 2 inches apart.
  5. Bake 10 minutes in a 375° oven. Cool briefly on pan.
