Time to make another nice stout. This is another modification on my basic coffee stout.

  • 2 cans (6.6 lbs) Light LME
  • 1lbs Roasted barley
  • 8 oz Coffee Malt
  • 1lbs Crystal 90 malt
  • 1 oz spalt hops
  • 1 oz golding hops
  • .5 oz fuggle hops
  • .5 tsp Irish moss
  • 5 oz priming sugar

Brought 2.5 gallons water to 160 F. Removed from heat and soaked grains for 45 minutes. Added 2 gallons of water and brought to 180F. Added lme and splat and set a 1 hour timer. At 30 minutes, added the irish moss. At 15 minutes, added the golding hops. At 2 minutes, added the fuggle. Cooled in air to 96F. Topped to 5 gallons with cold water. Pitched at 88F.

IG: 1.056 @ 88F = 1.060 @ 60F

Racked. Not as sweet as expected. Very tasty, with a good coffee and nutty character. Happier finish than I expected. Higher alpha hops are contributing to the bitterness. - Morrigu 12/13/12
