Manicotti

This recipe came from my mom. I'm not sure where she got it.

Serves 2.

  • 1/2 cup sifted flour
  • 1/2 cup water
  • 2 eggs
  • 3-4 slices Mozzarella cheese, cut into strips
  • 1/2 cup ricotta cheese
  • Parmesan/Romano cheese, grated
  • Tomato sauce

Heat oven to 350.

For pasta: Beat flour and water until smooth, beat in eggs one at a time. Heat a 5 - 6 inch skillet over low heat. Grease with a few drops of oil, using a brush. Ladle batter into skillet. Cook over low heat until firm. Turn. Do not burn or brown. Turn out on dish. Makes 3 - 4 pancakes.

For filling: Divide the mozzarella strips and ricotta cheese evenly among the pancakes. Sprinkle with grated cheese, and roll them up. Put tomato sauce on the bottom of a baking dish. Put the manicotti in, seam side down. Cover with more sauce, top with grated cheese, and bake at 350 degrees until bubbly.

Notes and changes: The "until bubbly" is somewhere in the neighborhood of a half hour. These look beautiful with a little bit of fresh basil sliced up on top. Also, next time, I'd try shredding the mozzarella and mixing it with the ricotta.
