Cranberry Orange Muffins, Jesse Pinkman method
You know how Jesse Pinkman just slaps some shit together when he's cooking up a batch? That's approximately how difficult this recipe was. I gave myself an A+ for coming up with this recently, after remembering that this very cute, very smart pilot had mentioned missing his mom's version, which he only got once a year around Thanksgiving. Since I already had frozen cranberries left over from Drunksgiving, all I needed was an orange from the liquor store next door and some sour cream from the gas station. Voila, I cooked up a batch and packed it in a motor winding box stolen from a coworker's desk, and wrapped it in an anti-static bag from my test bench. Not ghetto at all! I was too shy to deliver it in person the first time, but fortunately that delivery method failed, giving me a chance to lure him to my office with the promise of robots, and earning me hug privileges. I think it was the static bag that won me points.
Ingredients:
~1 cup sour cream (an 8 oz container will do ya right)
~1/3 cup oil (eyeballing is fine, somewhere between 1/4 and 1/2 is good)
2 eggs
2 cups flour (enh, close is fine)
2 tsp baking powder
3/4 cup white sugar (enh, -ish)
1 1/4 cup frozen cranberries (ish. More doesn't hurt)
1 large orange
Tools:
2 big ass bowls
1 spatula
About 16 muffin cups in a muffin tin
Preheat your oven to 350. Whisk the eggs, oil, and sour cream together (in a bowl, preferably, and not right on your counter). Sift the flour with the baking powder and sugar, then pour it into the wet mixture and stir. Grate the orange zest into the bowl, then add the cranberries, still frozen. Slop that mixture into muffin cups and bake at 350 for anywhere from 15-20 min. Go make someone's day.
